Abstract: This study presents production of thermostable lactase by Lactobacillus amylophilus GV6 using cheese whey permeate (CWP), the first report on its lactase producing ability. In cheese production, large quantities of CWP (lactose, 4.4-5.2%) are generated as waste, which creates environmental problems due to its high BOD/COD. Highest lactase production (2600±100 U/ml), observed at 0.9% substrate concentration, is comparatively higher than the reports available. This organism can be used for cost effective large scale production of lactase for various industrial applications.
