The <i style="">Nepalis</i> of the Himalayan regions of India, Nepal and Bhutan prepare a cereal-based fermented food, <i style="">Selroti</i> using their indigenous knowledge. The paper documents the traditional knowledge of the ethnic Himalayan people on preparation of <i style="">Selroti</i> and its ethnical importance.
