Title: Effect of solvents on the hydrolysis of casein catalysed by pepsin-A kinetic study

Abstract: It is observed that pepsin shows increased catalytic activity in aquo-alcoholic media compared to aqueous media. The maximum activity of pepsin has been recorded in the 20% to 40% range of 0.2M of aquo-alcoholic media. Kinetics of pepsin catalysed hydrolysis of casein has been investigated in different alcohols viz., methanol, ethanol, n-propanol, isopropanol and t-butanol. At 0.2M alcohol concentration thermal stability and activity of pepsin increases from primary to tertiary alcohols. The activity decreases and thermal stability increases with further increase in alcohol concentration.
