Abstract: A protocol for commercial production of a non digestible sweetner, fructo-oligosaccharide(s) from sucrose has been developed. A protocol for commercial production of a non digestible sweetner, fructo-oligosaccharide(s) from sucrose has been developed. The extracellular enzyme fructosyl transferase was isolated and purified from Aureobasidium pullulans. The enzyme was covalently immobilized on CNBr activated agarose for its economical Viability and for continuous use.
